Pax Verum Brewing in Lapel Announces Opening on April 28th

Brewery aims to connect craftsmanship and community in small town taproom.

Lapel, IN (April 24, 2018)Pax Verum Brewing Co. at 908 Main St. in Lapel will open to the public on Saturday, April 28th, 2018 from 3pm-11pm. Translated from Latin, the name of the brewery means “True Peace,” and the taproom is an interpretation of finding true peace through craftsmanship and a sense of community. Starting this Saturday, the brewery/taproom will be open Weds/Thurs: 3pm–9pm, Fri/Sat: 11am-10pm, and Sun: 11am-6pm. These hours will hold for the present time and will be extended in the near future.

Co-owners Jason Watson and Doug Goff created a pilot brewery on 191st Street in Noblesville after homebrewing for eight years and falling in the love with the science and artistry of producing craft beer. Joined by partner Chris Magee when they decided to go professional, these former Gorgon Homebrewers chose Lapel as the site of their brewery so that they could take advantage of the same excellent water source for their beers. Head Brewer Doug Goff states, “Pooling from the same aquifer ensures the consistency of our flavor profiles and maintains a quality product.” Pax Verum Brewing will offer a variety of styles of beer on tap and for growler fills. They have something for every palate, including wine. Using a 10 bbl brewhouse visible from the taproom, they will consistently produce a rounded variety of craft beers to fill their 15 taps. The craftsmanship of the beers parallels the care and craftmanship that Pax Verum taken in lovingly restoring their 1900s building, which originally housed a jewelry store.

Jason, Doug, and Chris have created an ambiance in this space that highlights the original architecture while preserving/repurposing much of its existing wood and bricks, as well as adding fabricated metalwork to give a little industrial vibe. They encourage patrons to ask about the origins of all the pieces they see in the taproom. The restoration shows a commitment to “keep things local!”  The Pax Verum team supports local craftsmen and vendors, and are proud to be Indiana grown; even the hops are local, being sourced from Crazy Horse Hops in Knightstown.

A visually stunning and welcoming outdoor beer garden is also a focus of the Pax Verum experience. To be opened in early June and as large as the indoor taproom, the beer garden will have both covered and open areas, fire pits, seating, and games, as well as unique sculptures created by a local artist. Live music in the garden will be a staple of the summer and fall.

In another move to support local craft, Pax Verum will be serving a limited “express snacks menu” provided by local chef Joe Hsu of 5280 Bistro, with a larger menu designed by Chef Hsu in the near future. Joe has extensive experience creating food to highlight and pair well with craft beer. The snacks menu will be available during all open hours, including handcrafted Pax Verum beer cheese made served with warm Bavarian style pretzels, veggie and Mediterranean trays with hummus, as well as homemade chips and salsa. To complement this, local food trucks will visit on the weekends. On Opening Day, the food truck from FoxGardin in Fortville.

Music will certainly be part of the peace-seeking mission of Pax Verum. The rustic taproom is juxtaposed with a high tech sound system, which will broadcast music from the latest devices as well as from reel to reel tape and turntable. Vinyl nights will be a regular occurrence, and future events at the brewery will be themed around music. Live music, both inside and out, will also be a staple of the Pax Verum experience.
