Feeling Hungry?  How About Some Upland Wheat Ale Goat Cheese Dip?

I consider beer cheese to be one of the most prized appetizer items on a restaurant’s menu.  Wherever I go I am always game to try a new beer cheese, and I find myself appreciating all varieties.  The drippy Velveeta version that was likely just zapped in the microwave minutes before serving suits me just as well as the more gourmet mustardy versions with a craft beer to its name.  While most seem to, rather successfully, stick with the cheddars and goudas our great nation produces, I would like to see more variety in cheese choice.  Therefore I present my humble contribution to the beer cheese world – Upland Wheat Ale Goat Cheese Dip:

Ingredients:

8 oz goat cheese
2 oz cream cheese
1 tablespoon honey
Zest of 1 lemon
1 tablespoon lemon juice
2.5 ounces good wheat ale
Pink peppercorn (or black if that’s what you have on hand)
Salt
Dill for garnish

Mix goat cheese, cream cheese, 3/4 of the zest, lemon juice, honey, salt & pepper and beer.  I used my KitchenAid because I’m fancy, but if your cheeses are at room temperature you should be able to get it good and blended by hand with a spatula.  Once mixed, put in a vessel that would make your grandmother proud to see you bring to a party.  Garnish with a little dill and pepper, and a drizzle of honey.  Refrigerate for at least an hour to let everyone get to know each other well enough.  Enjoy with pretzels, pita chips, or veggies.  Just kidding about that last one.  No, okay, veggies would be pretty good here.

Eat with that good wheat ale you already have.  I chose Upland Wheat Ale, from a little brewery in Bloomington, Indiana.  My parents often bring me back some of their beer when they visit Brown County, Indiana and I’m always pleasantly impressed by their beers.  Their wheat ale is a great example.  It manages to be really light while still holding a lot of lovely wheat and subtle fruit flavor.  In keeping with my recent Parks & Rec theme, it’s also worth mentioning Upland can be spotted in the hands of the good people of Pawnee.  Anything Donna Meagle does is 100% worth doing.

Wheat ales and goat cheese are good friends – the light fruitiness of the wheat beer plays well with the creamy  and mildly earthy flavor of the goat cheese.  The wheat beer also does a great job of cleansing that lingering goat cheese taste from your mouth.  I know this because I accidentally got a big blob of the dip on the mouth of my beer and one big swig wiped it all away.  Keeping it classy, as always.
