In a previous article I mentioned that Big Woods/Quaff ON! Brewing Company was going to be distilling in the near future. I recently corresponded with Tim O’Bryan, Co-Founder of Big Woods Brewing, and got the skinny on the proposed distillery and the following is what I learned.
The distillery will be located in downtown Nashville at Big Woods Village. They are still in the process of getting the permit approval, but that should be happening very soon. The build out for the distillery will likely begin in late February or early March, and they plan to distill a wide variety of spirits and look forward to utilizing many of the ingredients that are used to make their beer (at least for their early batches).
According to Tim, “Distillation will be an exciting expansion of what we have to offer from Big Woods Village and Quaff ON! Brewing Company. The operating name for the distillery will be under the Quaff ON! name. Once we ramp up production, we do plan to distribute.”
As I wrote in that previous article (Something Big is Happening in Little Nashville) big things are indeed happening in little Nashville.
Quaff ON! Brewing Company was formed in 2012 in response to the demand for the iconic beers developed at Big Woods Brewing Company located in the heart of Brown County, Indiana. Big Woods Village is just across the street from the brewpub, and is home to a 4 bbl system, a brewhouse, a smokehouse, and their pizza company.
