Donum Dei Brewery in New Albany To Debut Spirits at Third Anniversary Party in March

As first reported by Ken Gibson on InsiderLouisville.com, in late 2017 owners Richard and Kim Otey of Donum Dei Brewery obtained permits to distill spirits, and now are preparing to ramp up their product development and production. The first product to be released to the public will be a barrel aged whiskey on March 17, in conjunction with their anniversary party. The third anniversary party will also mark the release of the 2018 Drunken Unicorn, a bourbon barrel aged Scotch ale.

Planned products for the distilling portion of Donum Dei will include whiskey, apple brandy, gin, and vodka, with each being phased in over time. The spirits will be sold in 750 ml bottles as well as being served on site in the form of specialty cocktails.The first effort from Donum Dei was a distilled version of their red ale, and demonstrates that the distillation apparatus can also be used to produce spirits from craft beer – making this a brewstillery. Following the examples of other brewstilleries around the country, the Otey’s hired a consultant to help them get the distillery ready.

The federal tax bill signed last month is a boon for operations such as Donum Dei; the reduced excise taxes on beer and spirits provided the motivation and expected capital for the expansion at this particular time. Richard said that with the current two year window on the tax cuts, he wanted to, “Make hay while the sun shines.”
