A new partnership between the American brewery Three Floyds and Mikkeller Copenhagen is going to make its mark on the Meatpacking District.

The two parties are responsible for a 1,000 square foot lot brygpub that it was planned opening for the winter and will be named ‘Warpigs’.

The address will be Flæsketorvet in the Meatpacking District, which already includes bars as Bakken, Jolene, Career and restaurants as Kødbyens Fiskebar, Coal, Mother, Nose2Tail and a number of galleries.

The construction of a brewery, which annually produce 200-250000 liters of beer of the more experimental kind that both Three Floyds and Mikkel Borg Mountains (the man behind Mikkeller) is already known.

Three Floyds is known for its clean American beer with a strong hop flavor, while at Mikkellers beer bars in Copenhagen (at Viktoria Street and Stephen Street in Nørrebro), for example, can order beer brewed on the vietnamese Kopi Luwak coffee, made from beans, which is passed through the intestines of a væseldyr, chiliøl and beer brewed on cherries from Stevns or lycheefrugter from Asia.

Mikkeller has quickly made a name both at home and abroad with its special brew, but the big collaboration with Three Floyds give the whole business a notch up, says Jacob Alsing who is chief operating officer and will lead the construction of the brew pub.

“Three Floyds is brewing world of actual rock stars, and is repeatedly voted the world’s best beer. That they have chosen to make it here with us is going to resonate internationally.”

Smoke and salt in the kitchen
Cooperation with the U.S. brewery, which is based in Chicago, means that you, along with beer can order American barbecue from brygpubbens restaurant will seat 200 guests. More specifically in the genre of Texas Smokehouse since brew pub is purchasing special stoves to long-term smoking cuts like brisket, ribs and short ribs.

“It will be a form of barbecue, we do not have in Denmark today. A smoked and salted category that fits perfectly with beer. And then we can also use beer to marinate the meat and sauces, “says Jacob Alsing.

Warpigs opens if all goes as planned, at the end of the year or in early 2015.

‘War Pigs’ is incidentally also the title of the opening track on the Black Sabbath album ‘Paranoid’ from 1970.
