Kristina Mazza, former Lux Restaurant Group Operations Manager and south east PA native, is the mastermind behind Hoagies & Hops— a hoagie shop now located inside the Flat12 Bierwerks taproom. The shop features authentic Philly-style cold fare, with creative spins on Pittsburgh and Pennsylvania Dutch specialties. The menu focuses on several kinds of hoagies, with traditional deli sides available like whole dill pickles, pickled beet eggs, Herr’s Crisp N’ Tasty chips, and prosciutto and provolone stuffed peppadew peppers.
With the majority of the ingredients imported directly from the East Coast – hoagie rolls from the famous Liscio’s Bakery out of South Jersey and cheeses and meats special ordered from well-renowned Philly supplier Dietz & Watson, it’s apparent that Hoagies & Hops will be about providing an authentic Philly hoagie experience. The menu includes local ingredients as well, like Indy’s Pat’s Philly Pretzels and bacon from neighborhood meatery Smoking Goose. Mazza also plans to increase local food sourcing as the menu grows.
“The concept isn’t fast food, it’s casual dining, in or out.” said Mazza. “I remember some of my favorite hoagie shops in Philly regularly having lines out the door, but it was always worth the wait.”
Flat12 owner, Sean O’Connor and Mazza have a long history. The two have been friends since the annual St. Patrick’s Day party at the Elbow Room on Pennsylvania St. —one of Flat12’s very first accounts— back when Mazza was the General Manager.
Hoagies & Hops will operate in conjunction with Flat12’s current open hours, but both are looking to expand hours in the near future. With limited dining options on the near east side, plans to open for lunch are in the works.
