Just Add Beer: White Truffle Mac & Cheese With Flat12’s Amber Ale

Ingredients
2 ½ cups dry macaroni noodles (whole wheat or regular)
2 tbsp butter
2 tbsp flour
8 oz milk (or 4 oz milk and 4 oz whipping cream)
8 oz Flat 12 Bierwerks’ “Hello My Name is Amber” ale (can substitute with any Amber Ale)
6 oz shredded parmesan cheese
6 oz shredded white cheddar cheese
6 oz shredded sharp orange cheddar cheese
1 ½ tbsp white truffle oil
1 tsp chicken (or vegetable) bouillon
1 tsp smoked paprika
Salt and Pepper to taste
 
Panko Bread Crumbs for top
 
Bacon for garnish
 
Preparation
Pre-heat oven to 375 degrees F

Cook noodles per instructions on box (shave off 1-2 mins, because they’ll keep cooking in the oven)

In large sauce pan melt butter, then add flower a little bit at a time, stirring constantly to make the roux. Once the rue is bubbling slightly and looks nice and golden brown, SLOWLY add the milk (or milk and whipping cream), stirring constantly. After milk and roux are completely combined, add 8 oz of Flat12 “Hello My Name is Amber” ale and stir to combine.

Let this sit on MED heat until thickened (about 5-6 mins). This may not thicken as much as a regular roux because of the beer, but you’ll want it to thicken a little.

Once the beer/milk/roux has thickened as much as possible, add in all cheese. Once cheese has been incorporated, add bouillon, paprika, salt, pepper and stir. Once everything is stirred together, take off of the heat source, and stir in white truffle oil.

After all has been stirred together, scrape mac and cheese into an oven safe dish and cover top with panko bread crumbs and a little more parmesan cheese.

Bake @ 375 for 30 mins
 
While mac and cheese is baking, cook several slices of bacon to your liking. I like super crispy, almost burnt bacon, as it adds a nice texture to the dish!  Once the bacon is done cooking, let it cool for a minute and crumble it up.
 
When the mac and cheese is done cooking, turn the broiler on high for about 1 min (it adds a nice brown crunch to the top)

Serve while hot, and sprinkle bacon on top.
